As in all of our jams, we don’t use pectin in this jam. Why? Because blackberries naturally have their own pectin. Adding more pectin only serves to lock in all the extraneous water in the berry, depriving you of the concentrated flavor available only in our jams.

Nestled in the green, rolling farmlands of Ohio, a small Summer Kitchen faces south to catch the warm rays of the sun. In this kitchen, jam pots bubble merrily as swaying ceiling fans whisk away the steam and heavy heat. Fragrant raspberries, gentle peaches, and sweet, crisp apples from the farmer down the road vie for dominance in a world where smell, taste, color, and texture mean everything.
This little Summer Kitchen celebrates the seasons with the earth. In the spring, Rhubarb and Strawberry Conserve and exciting Vidalia Onion Relish rule the kitchen until the summer fruits arrive: delicate Peach Preserves, sinful Strawberry Jam, traditional Blackberry Jam, and the indomitable Raspberry Jam. In August the harvest begins in earnest, producing a wild palate of flavors and dizzying colors: Salsa, Apricot and Honey Jam, Black Plum Jam, Black Raspberry and Nectarine Preserves – almost too much for the hungry soul to bear!
Finally the calming fall arrives with soothing Apple Cider Butter and Apple Chutney. The Summer Kitchen prepares for a long, cold Ohio winter with satisfying Cranberry Chutney, Christmas Jam, and Praline Syrup. Ahh, time to rest and cool the stove until… SPRING! |
